Paleo Pumpkin Bread




I love everything Pumpkin related, I am obsessed with this bread, I have been making for weeks, it is a low carb type of bread: Gluten free.


Ingredients

  • 2 cup almond flour

  • 1 tbsp all spice

  • 1 tsp baking soda

  • pinch of salt

  • 1 ¼ cups homemade roasted pumpkin puree

  • 3 eggs

  • 2 tbsp olive oil or coconut oil

  • 2 tbsp Maple syrup or Rice Syrup

  • 2 tbs of vanilla extract

  • ¼ cup chopped walnuts plus extra for the top (optional)

Directions

  1. Preheat oven to 350°F.

  2. Line a loaf tin with parchment paper. Set aside.

  3. In a large bowl mix almond flour, coconut flour, cinnamon, nutmeg, allspice, salt and baking soda. Set aside.

  4. In another bowl place eggs and maple syrup and whisk to combine.

  5. Add pumpkin puree, olive oil and whisk to combine.

  6. Pour the wet ingredients into the dry ingredients and mix to combine.

  7. Fold in chopped walnuts if using.

  8. Pour the batter into the tin and smooth with spatula.

  9. Sprinkle extra chopped walnuts (if using) over the top.

  10. Bake for 55-65 minutes or until toothpick inserted in center comes out clean.

  11. Remove from the oven and allow to cool before slicing.



PS: I don't use the syrup and vanilla as I prefer more of a savoury bread , just the pumpkin with the spices has enough sweetness for me.
