Quick & inexpensive recipe, delicious and filling.

Beans & Chorizo
 

 
This is easy enough , even your teen can make it !


 
Serves 4
 

Ingredients:
 
4 cans cannellini beans, drained & rinsed
 
2 punnets (250g each) cherry tomatoes
 
4 chorizo, sliced
 
1 large Spanish onion, sliced into thin wedges
 
3 cloves garlic, sliced
 
1/2 tsp chilli flakes
 
3 Tbsp olive oil
 
Salt & pepper
 

 
Preheat oven 170 C
 
Toss everything into a roasting dish & cover with foil.
 
Bake for an hour, remove and allow to rest for 15 minutes.
 
Enjoy on the couch with the TV on, feet up and a glass of wine!
